Polish Pancakes (Crepes) with White Cheese





Traditional, loved by children, great for packed lunch, healthy (Full Fat White Cheese is a great source of protein, though it do not contain as much calcium as "yellow" cheese, still good alternative for fish fingers or fast food). You're about to learn the best and the simplest recipe:

1.You will need for pancakes:
  • 1-2 eggs (mix eggs only for some 3-5 min and than add the rest of ingredients, if you double the ingredients don't use more than 3 eggs)
  • 1 cup plain flower (we're in England so I'm talking about regular cup, that you would drink your tea from)
  • 1,5 cup of full fat milk (or a bit more, you want to achieve a rather liquid texture sort of like single cream)
  • tea spoon of sugar and pinch of salt
2, For white cheese feeling:
  • Full Fat White Cheese (see the picture below, you can purchase it in any polish shop, if you struggle to find it, just ask the shop assistant, they are all very nice ladies, but please do not flirt with them, as we Polish Woman are very old fashion and do not buy cheap chatty techniques ;)
 

  • 1 small package of Vanilla Sugar, that's another think you will get in Polish Shop (you can use less and add more normal sugar)
  • 1 egg yolk
  • some 3-5 tea spoons of sugar, just make it as sweet as you want
Do not go for any other cheese, like Ricotta or Cottage Cheese. Some people use vanilla yogurt instead of egg yolk and sugar, but the whole point is to make the cheese thick (see the photo), and I personally like it best, along with my kid.

3. Now make the pancakes:
  • In a plastic bowl mix (for some 3-5 min) with electric mixer 2 eggs until they look like a creamy, fluffy sort of cream.
  • Add milk, flower and salt&sugar, mix again for some 5-7min until you get a smooth creamy liquid, surprisingly you will learn that to get the best pancakes you don't need it to be very thick, but as you make the pancakes many times you will know when it's perfect
  • Frying pan must be tefal. Put some oil on the pan (I use the paper tower to remove to much oil, but before it's hot), once hot pour a bit of creamy thing you just made, do not put much, just move the pan around so it's whole surface is covered. After a few minutes, move the pancake on the other side. 
  • Don't rush, use the medium heat (5-6), otherwise you will burn the pancakes
  • You don't have to put any more oil on the pan each time, but after 6th or 7th time pankaces might start to stick so you might add some oil.
4. Now feel the pancakes with cheese:

  • On separate plate put some 1 or 1/5 table spoon of cheese feeling and spreed it on the whole pancake (see the picture)
 
  • Roll the pancake and cut into 2 halves, serve with whipped cream, fruits (bananas or berries), chocolate sauce, or simply with sugar powder (Polish shop) - dry icing sugar:
  • If you're using other feelings as well, you can let the kids prepare the pancakes themselves. Put on the table all the feeling, whipped cream, icing sugar, fruits for decorating. Great fun for children, and they will definitely eat a lot! You can make a real Pancake Party!
